Granola is essentially rolled oats toasted in a pan or the oven with stuff in it. Some of that stuff is sweet, and some of that stuff is crunchy - usually. If there is a food in the world that is best adapted to your taste, this is it. So make it your own, cook a giant batch, and enjoy.
2 tablespoons extra-virgin olive or other cold-pressed oil
2 tablespoons honey or maple syrup, or more (or less) to taste
6 cups oats
A large pinch of salt
2 cups assorted nuts and seeds, broken or chopped if necessary: peanuts (salted are fine), sesame, walnuts, pecans, pepitas, sunflower, almonds, shredded or flaked coconut, etc.
1 cup raisins, optional
1. In a large skillet or wok or whatever you have, heat the oil over medium heat; a minute later, add the sweetener. When that boils, add the oats and salt and cook, stirring, for a minute or two.
2. Add the nuts and seeds and continue to stir occasionally for about 5 minutes, until something - anything - begins to brown. The oats will have darkened in color by this time. Turn off the heat and stir in the raisins (or whatever) if you’re using them.
3. Spread on a cookie sheet to cool, and store. Keeps at room temperature for as long as it takes for you to eat it.
